Pete founded LXA Hospitality, off the back of over 20 years of launching hospitality venues across the UK and the Middle East. Pete’s focus has historically been in the operational and commercial aspects of hospitality businesses but, has also now nurtured LXA Hospitality into becoming a leading agency in all explorative and creative aspects of concept development & strategy too. Pete sits on the board of several restaurant businesses and is the co-founder and co-owner of both Maria G’s and Hospitality Titans.
Shân Rees
Associate Director

Shân is a highly experienced restaurant concept creator, with a background in brand and interior design of both hospitality venues and food & beverage retail products, providing a deep understanding of how to achieve customer engagement for the long term. She heads up our Market Research and Concept Development team, absorbing trend data and translating that for our clients into beautiful hospitality brands, by way of overarching concept direction, look & feel, menus, products, suppliers and all other customer touch points.
Ellenor Taylor
Hospitality Consultant

Ellenor is part of our Market Research and Concept Development team, taking a particular focus on market trends and menu development. Ellenor holds a diploma from Leiths School of Food and Wine and has worked in the kitchens of several London restaurants and event catering companies. These experiences have helped Ellenor develop technical skills in a range of culinary styles, as well as a knowledge of wine, emerging industry trends and menu and service planning.
Sunny Patel
Hospitality Operations Manager

Sunny joined LXA Hospitality with over 20 years’ experience in Hospitality Operations. He is a classically trained chef, but his career has taken him all over the world in a diverse range of venues, creating an in-depth knowledge of all operational aspects. Sunny now specialises in training and new openings, having previously held national level roles in these fields.
Tristan Dooley
Hospitality Operations Manager

Tristan is a highly experience operations manager with over thirty years in the industry. Tristan’s portfolio includes cheffing at Michelin Star restaurant, Orrery, founding and directing his own award-winning sandwich deli and teaching students on the Diploma in Professional Cookery at Brighton Metropolitan College. These experiences have equipped him to thrive in fast-paced environments. He brings expert understanding, multi-site leadership, effective communication, and a proactive approach to assisting operations and maximising standards and performance across our ventures.
Tessa Aird
Hospitality Consultant

Tessa joined LXA Hospitality as part of our internship programme and has since become a permanent member of our Market Research and Concept Development team. Tessa graduated from the University of Exeter in June 2021 with a degree in Sociology and then spent 6 months travelling around South America, expanding her cultural knowledge of food & beverage bringing a diverse range of experience to the team.
